The kids like it when I make: Bacon Fried Rice
Interested to know what other people’s kids like to eat? Perhaps your picky (or adventurous!) eaters would enjoy it too? Or could you simply use a new ‘quick dinner fix’ to add to your repertoire?
Starting this month, here on the LMNOP Blog, mums and dads will be sharing their top ‘dinner winners’ with us. Hope these recipe posts inspire you to try something different and create a new family favourite.
Our first recipe comes from Wee Gallery’s Surya Pinto. Surya told us in this interview, her kids like it when she makes Bacon Fried Rice. “I like it too. Two pieces of bacon between the 4 of us helps get down a ton of vegetables.” she says.
BACON FRIED RICE shared by Surya Pinto.
4 cups of leftover cooked rice, or cook 2 cups uncooked rice
3 cups of assorted vegetables chopped small
(broccoli, carrots, onions, red peppers, corn, and spinach work well.)
2-3 pieces of bacon chopped small
2 eggs lightly beaten
Fry the bacon till it’s cooked through, (crisp if that’s the way you like it) and drain the oil that forms. Add the vegetables and saute till vegetables are half cooked, about 5 minutes. Add the eggs and keep stirring till eggs are cooked and look scrambled. Add cooked rice and mix well till heated through.
Serve plain or with soy sauce.
